Stuffed avocados make a great meal for anyone that wants to eat well despite their busy lifestyle. They are nutritious, low in carbs and delicous. If you buy the chicken pre-cooked or do your prep on the weekend, you can whip these up in under 5 minutes!
Ingredients (makes two servings)
1 extra large or 2 medium avocados, seed removed.
1 1/2 cup chicken, cooked (you can get shredded roast chicken in the supermarket deli)
1/4 cup mayonnaise (get high quality mayo with as few preservatives as possible or make your own)
2 tbsp sour cream or cream cheese
1 tsp thyme, dried
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
2 tbsp fresh lemon juice
1/4 tsp salt or more to taste (Pink Himalayan is best)
1. Cut or shred the cooked chicken into small pieces.
2. Add the mayo, sour cream, thyme, paprika, onion powder, garlic powder, cayenne pepper, lemon juice. Season with salt to taste. Combine well.
3. Scoop the middle of the avocado out leaving about 2cm of the avocado flesh. Cut the scooped avocado into small pieces.
4. Place the chopped avocado into the bowl with the chicken and mix until well combined. Fill each avocado half with the chicken and avocado.
